Investigating stories of Mexico, several people pointed out that I had to talk with the owner of the restaurant Amado Itanoni in Mexico, is the ‘guru of corn’ they said. The restaurant only serves the most traditional Mexican dishes, highlighting the various organic corn, harvest of local farmers in the region Oaxacan, in their purest form. Apart from the taste and tradition, Amado reveals a poetic truth about the power of this ancient grain.
